Pretzel Bites
I love
anything pretzel-related and friends often ask me to bring these
Pretzel Bites to parties. I found the recipe several years ago on
Pinterest and have been making it ever since. These Pretzel Bites
taste best on the day that they are made, as they become a bit soggy
after overnight storage.
Ingredients:
1 ½ cups
warm water (110 to 115 degrees)
1
tablespoon sugar
1 ½
teaspoons kosher salt
1 package
active dry yeast
4 ½ cups
flour
¼ cup
butter, melted
10 cups
water
2/3 cup
baking soda
1 egg yolk,
beaten with 1 tablespoon of water
pretzel
salt or coarse sea salt
Combine the
warm water, sugar, and kosher salt in the bowl of a stand mixer.
Sprinkle the yeast on top and allow to sit for 5 minutes. Add the
flour and butter, then use the dough hook attachment on low speed to
combine. Knead the dough on medium speed for 4 to 5 minutes. Remove
the dough from the stand mixer, place it in an oiled bowl, cover with
plastic wrap, and leave in a warm place for 55 minutes.
Preheat the
oven to 450 degrees and line 2 baking sheets with parchment paper;
set aside. Bring the 10 cups of water and baking soda to a rolling
boil in a large pan or Dutch oven. While the water boils, divide the
dough into 4 equal pieces. Roll each piece into a 22-inch rope. Cut
each rope into 1-inch pieces and then roll them into balls. (The
balls will not be perfect and that is OK.) When all of the balls are
ready, drop them a few at a time into the boiling water for 30
seconds. Remove the balls and transfer them to the prepared baking
sheets. (Clean-up note: the boiling baking soda water will splatter
in a 1 foot radius around the pot.) Brush each ball of dough with
the egg wash and then sprinkle with salt. Bake for 12 to 14 minutes.
