Cinnamon Swirl Bread
It's been a while
since I posted but I'm back and ready to share this very simple yet
tasty recipe with you. This Cinnamon Swirl Bread makes a great
addition to brunch, tea, or as an afternoon snack. You will most
likely already have all of the ingredients in your
refrigerator/pantry and can whip up a loaf in very little time with
very little effort.
Swirl Ingredients:
¼ cup brown sugar
2 teaspoons cinnamon
½ teaspoon nutmeg
Bread Ingredients:
2 cups flour
1 tablespoon baking
powder
½ teaspoon salt
1 cup sugar (scant)
1 egg, beaten
1 cup milk
1/3 cup oil (I
prefer to use either olive or coconut)
½ teaspoon vanilla
Preheat oven to 350
degrees. Butter/oil a 9x5 inch loaf pan. Mix together the brown
sugar, cinnamon, and nutmeg in a very small bowl; set aside.
In a large bowl
combine the flour, baking powder, salt, and sugar. In a medium bowl
combine the egg, milk, oil, and vanilla. Add the wet ingredients to
the dry ingredients and stir just until moistened. Pour 1/3 of the
batter into the loaf pan, then sprinkle 1/3 of the swirl mixture on
top and repeat until you have used all of the batter and swirl
mixture. Using a knife or wooden skewer, draw a few lines back and
forth in the batter to create a marble effect (which you will only be
able to see once you slice the bread after baking).
Bake for 45 to 50
minutes, turning the pan in the oven halfway through baking. The
loaf is finished baking when a toothpick inserted in the center comes
out clean. Let cool, then slice and serve.
