Snickerdoodle Blondies
I get frequent
requests to bake for people and no one is more persistent than my
husband’s coworkers. We recently attended a work party for the
company where he is employed and someone very strongly hinted that
they would like for me to send snickerdoodles to work sometime soon.
Life is busy and I didn’t have time to make several batches of
cookies so I went in search of a cookie bar recipe and found this
one. The best thing about this recipe, aside from the phenomenal
taste, is how quickly and easily the blondies come together to bake.

Ingredients:
1 tablespoon sugar
¾ teaspoon cinnamon
2 ¾ cups flour
1 teaspoon baking powder
½ teaspoon cream of tartar
¼ teaspoon salt
1 cup butter, melted
2 cups sugar (scant)
2 tablespoons milk
2 eggs
Preheat oven to 350
degrees. Butter/oil a 13” x 9” pan and set aside. Measure the
tablespoon of sugar and ¾ teaspoon cinnamon into a ramekin or very
small bowl and set aside. In a medium bowl whisk together the flour,
baking powder, cream of tartar, and salt; set aside. Combine the
melted butter, sugar, and milk in a large bowl. Add the eggs and
stir just until combined. Pour in the dry ingredients and mix just
until incorporated. (Overmixing will affect the texture of your
blondies.) Spread the batter into the prepared pan and smooth the
top evenly across the pan. Sprinkle the cinnamon/sugar mixture over
the batter and bake for 25 to 28 minutes. Cool slightly, cut into
squares/rectangles, and serve.
