Chocolate Chip Cookie Tart
Here is my
go-to recipe for parties and potlucks when I'm pressed for time. The
ingredients are all inexpensive staples that I generally have on hand
and almost everyone loves chocolate chip cookies. To make this look
fancy, you could always drizzle melted chocolate over the top in a
decorative fashion or, for a special occasion, you could pipe
frosting to spell out “Happy Birthday” or “Congratulations,”
etc. As a bonus, this recipe yields enough extra dough for about a
dozen cookies after you make the tart.
Ingredients:
2 ¼ cup
flour
½ teaspoon
baking soda
1 cup
butter, softened
½ cup
sugar
1 cup light
brown sugar
1 teaspoon
salt
2 teaspoons
vanilla
2 eggs
1 cup mini
semi-sweet chocolate chips*
*Note: Add
as many or as few chocolate chips as you like in whatever size you
prefer. I have just listed my personal preference here.
Preheat
oven to 325 degrees. Butter a tart pan or pie pan and set aside. In
a small bowl, whisk together the flour and baking soda and set aside.
Combine the butter and both sugars in the bowl of a stand mixer on
medium speed until light and fluffy. Scrape down the bowl and then
add the salt, vanilla, and eggs. Beat on low speed for about 1
minute. Scrape down the bowl and then add the flour mixture on low
speed, mixing just until combined. Remove the bowl from the stand
mixer and stir in the chocolate chips by hand. Press 3 cups of the
dough into the buttered pan and bake until the edges are golden
brown, approximately 40 to 45 minutes.
Makes one
9-inch tart and approximately 1 dozen cookies. To bake the cookies,
increase the oven temperature to 350 degrees, portion the dough by
the tablespoon onto a cookie sheet, and bake for 8 to 10 minutes.
