Cardamom Honey Cookies
We've had a
lot of snow days recently and my son has been living the dream:
movies, snow forts, hot cocoa with marshmallows, and cookies. With
his help, I made these easy Cardamom Honey Cookies and we enjoyed
every last crumb. If you don't have or can't find cardamom, you can
use cinnamon but I really recommend using cardamom for its unique
taste.
These
cookies could be decorated if you choose, but I personally love them
plain. With Valentine's Day around the corner, I chose to use a heart
shaped cookie cutter. Of course any shape will do, but remember that
large shapes will require more baking time and small shapes less
baking time. What is your favorite cookie cutter shape?
Ingredients:
3 cups
flour
1 teaspoon
cardamom
½ teaspoon
salt
¼ teaspoon
baking soda
1 cup
unsalted butter, softened to room temperature
¾ cup
sugar
¼ cup
honey
1 egg
1 teaspoon
vanilla
Whisk
together the flour, cardamom, salt, and baking soda in a large bowl
and set aside. In a stand mixer or with a hand-held mixer, beat
together the butter and sugar on medium speed for about 3 minutes.
Add the honey, egg, and vanilla and mix on medium speed for 1 minute.
Next add the dry ingredients and mix on low for a minute or less.
Divide the dough into 2 disks, wrap each in plastic wrap, and
refrigerate for one hour.
Preheat the
oven to 350 degrees. Roll out one dough disk to about 3/16 inch
thickness and cut out shapes with cookie cutter(s).
Place the cookies
1 inch apart on a baking sheet and bake for approximately 11 to 13
minutes, until the edges turn a light golden brown. Leave the cookies
on the baking sheet for 10 minutes after removing from the oven and
then transfer to a wire rack to finish cooling.
