Pumpkin Donut Holes
So these
are not technically “donut holes” because you bake them in a mini
muffin tin. However, rolling them in cinnamon and sugar rounds them
out a bit. Alternatively, you can roll them in powdered sugar, but
they won't look quite as round. I made half one way and half the
other; my son loved the powdered sugar ones while my husband and I
favored the cinnamon sugar. Also, I made this batch with coconut
milk because I have a family member with a dairy sensitivity and they
turned out great. These donut holes are best eaten on the day that
they are baked because they do not keep well.

donut holes/mini muffins
Donut Hole
Ingredients:
1 ¾ cups
flour
2 teaspoons
baking powder
½ teaspoon
salt
½ teaspoon
cinnamon
½ teaspoon
nutmeg
½ teaspoon
allspice
1/8
teaspoon ground cloves
½ cup milk
or non-dairy milk alternative
1/3 cup
vegetable oil
¾ cup
pumpkin puree
½ cup
brown sugar
1 large egg
1 teaspoon
vanilla extract
Topping:
3
tablespoons cinnamon
1 cup
sugar
1/2 cup unsalted butter, melted
and/0r
¾ – 1 ½
cups powdered sugar
Preheat
oven to 350 degrees. Lightly butter or oil two mini muffin tins and
set aside. Stir together the flour, baking powder, salt, cinnamon,
nutmeg, allspice, and cloves in a large bowl; set aside. In another
large bowl whisk together the milk, oil, pumpkin, brown sugar, egg,
and vanilla. Pour the wet ingredients over the dry ingredients and
stir just until combined. Fill each muffin tin cup ¾ full and bake
for 10 to 12 minutes. Muffins are done when a toothpick inserted
into the center comes out clean. Take the muffins out of the tin and
cool on a wire rack for 2 minutes.
Place the
wire racks on top of the used mini muffin tins so that any stray
sugar will fall onto the already dirty used muffin tin. If using
powdered sugar, place it in a small bowl near the muffins. If using
the cinnamon and sugar, combine them in a small bowl and place the
melted butter nearby. Dip each muffin into the melted butter and
then roll it quickly in the cinnamon and sugar to coat and place it
on the wire rack. Alternatively, roll the muffins in the powdered
sugar and place them on the wire racks. (The powdered sugar donut
holes are not dipped in melted butter.) Enjoy!
